I've never been a great chef and like a fair few people my skills lie with beans on toast and a bacon sandwhich, but boy, do I love to bake as of recent. I said that I would like to incorporate more recipes into Thumbelina Lillie and here you have it, numero uno. Two of my favourite treats in the world are brownies and cookies so today I'd share with you a recipe for pancake cookies, they may not be as huge and chewy, but they are equally as delicious because they're filled with chocolate. For these you'll need:
- 1 Egg
- 200g Unsalted Butter
- 300g Caster Sugar
- 300g Self Raising Flour
- Chocolate of your choice.
Before you start, turn your oven to 200 degrees celsius and line baking trays with margarine & baking paper. First of all beat your butter & sugar together until creamy, I find it easier to do this with an electric mixer as you don't want to be able to taste the crunch of the sugar. Add in your egg and mix again until it's one with the mixture. Then go ahead and toss in your flour in stages until the dough becomes drier, if it's too dry don't be afraid to add in a splash of milk. I like to use my (clean) hands to add the chocolate into the mix and work it in together; for small cookies I use one chunk of chocolate surrounded in mixture, for larger cookies I use about three or four. I only leave the cookies in for 8/9 minutes and leave them to cool as they will still be really soft when you take them out of the oven.
Voila! Pancakes cookies! I love how they have a great balance of crunchy on the outside and soft on the inside and the chocolate pieces are to die for. I hope you enjoyed my first recipe on here and let me know what type of other treats you would like to see! Thanks for reading!
